Why inventory management makes or breaks a restaurant

Food and beverage sit at the top of every hospitality P&L. A one-point movement in gross profit on a £1.5m food business is £15,000 a year. Inventory management is how you keep that movement in your favour: fewer stock-outs, less waste, tighter supplier pricing and accurate GP that you can actually trust week on week.

Running a stock take that people will actually finish

The single biggest failure mode of restaurant stock takes is that they take too long, so teams cut corners. Aim for a stock take a fully-trained team can finish in under 90 minutes per site.

  • Count in the same order every time — walk the room, not the spreadsheet.

Review it weekly with the head chef and bar manager and you will typically claw back 1–2 GP points inside a quarter.

Deliveries, invoices and the price-creep problem

Suppliers move prices constantly. Without a delivery-booking flow that flags price changes against the last price paid, those creeps land straight in your food cost and only surface a month later when the GP report is already bad.
